dc.description.abstractThe problem for this thesis Is threefold: first, to review some of the factors affecting the acceptance of food second, to review suggested methods of modifying food habits m%6 third, to ascertain the techniques and devices that are being used to achieve success In college and university food service—success being measured by acceptance of balanced meals by students. The first two aspects of this problem are dealt with in the review of literature. Due to the limited amount of Information available concerning food service policies In colleges and universities^ a series of interviews with food service directors was held to obtain material to satisfy the third aspect of this problem.
